Would you rather have a quesadilla or Italian sandwich? YES. How could anyone choose between those two? They’re both so delicious, the answer is obvious “yes, I’ll have both,” and now you can with this super easy “recipe.” We say “recipe” with quotations because you can really add any ingredients you want but here’s how we did it and loved it!
First, start with a tortilla. We used the 10” burrito size but you could really use any size and adjust the fillings. We layered sliced, fresh mozzarella on one half and Italian meats on the other half. Fresh mozzarella just adds such a creamy texture and flavor, but shredded mozzarella or provolone works great too. There is no shortage of Italian meats to choose from. Salami, capicola, pepperoni, prosciutto, mortadella … the list goes on and they’re all delicious. Pick a couple of your favorites and load them on the tortilla.
Then make it nice and toasty! This can be done by either placing the open-faced tortilla in a toaster oven or in a lightly oiled pan. Keep your tortilla open-faced so you can add the cold ingredients next. NOTE a little liquid will come out of the fresh mozzarella so if you’re using a toaster oven, it may be best to pick another Italian style cheese instead.
Once the tortilla is nice and toasty and melty, layer in your favorite toppings. First, HOT HONEY! Drizzle hot honey on top of the cheese and meats to give it the perfect sweet heat that enhances all the other flavors. Next, layer the greens on top of the meat half. We highly recommend Refreshing Romaine, but any of the Greenswell Growers assortment is delicious in this application. On top of the greens, arrange the roasted red peppers on top. The juice from the roasted red peppers almost creates a little dressing on the lettuce that is so delicious. Finally, fold over the cheesy half on top of the roasted red peppers. If you can handle one more step before devouring it, cut it in half and enjoy your Italian Hot Honey Quesadilla.
What You’ll Need:
- 1 10-inch tortilla
- 4 slices Genoa salami (~1 ½ oz)
- 4 slices sandwich pepperoni (~1 ½ oz)
- 3 slices fresh mozzarella, ripped (~1 oz)
- Olive oil or pan spray
- Hot honey, to taste
- 1 cup Greenswell Growers Refreshing Romaine
- 2 tablespoons roasted red peppers, sliced
How to Make It:
- On a 10” tortilla, arrange the sliced mozzarella on one half. On the other half, fold and arrange the salami layered with the pepperoni.
- In a pan with olive oil over medium-low heat, place the tortilla open-faced and heat until the cheese is beginning to melt, the meats are warm, and the tortilla is golden brown on the bottom. About 2 minutes.
- Drizzle hot honey on the cheese and meat.
- Place the Refreshing Romaine on top of the meats followed by roasted red peppers on top.
- Fold the cheese half on top of the peppers and slice in half before enjoying.
