Sheet Pan Nachos with Avocado Crema

Real question – are nachos essential at a gameday party?? Just kidding—that’s not a real question, because obviously everyone knows the answer is a resounding YES. Nachos are a gameday MUST. They are as essential as the TV to watch the big game.

A better question might be, are all nachos created equal? Now this could be up for debate, as nachos can come in several different forms with twice as many different toppings. You have “ballpark nachos,” classic corn chips with orange cheese dip and jalapeños (both from a can). There are “late-night nachos” or “nachos in a pinch,” featuring tortilla chips with shredded cheese and any leftovers piled on top that are gobbled up right out of the microwave. One could also argue chips and queso could even be considered nachos. Sure, we’ll give it to them, especially considering they all have their place in our delicious lives. However, for a big game, none quite compare to a great tray of “sheet pan nachos.” A full sheet pan layered with chips, covered in toppings, popped under a broiler, then loaded with cold toppings and a unique sauce on the side. It’s a culinary masterpiece with varying colors, flavors, temperatures, and textures, especially thanks to Greenswell Grower’s Essential Green Leaf. Best of all, it’s SO easy, a total crowd-pleaser, and has next to zero cleanup. So, whether you’re enjoying sheet pan nachos with a group or choosing to eat them solo for dinner, you won’t be disappointed by this build. 

What You’ll Need: 

Avocado Crema 

  • ½ cup Greek yogurt 
  • ½ medium avocado 
  • ¼ teaspoon honey 
  • 2 tablespoons lime juice (about ½ fresh-squeezed) 
  • ½ jalapeño, seeded and roughly chopped (optional, to taste) 
  • ½ teaspoon cumin 
  • ¼ teaspoon garlic powder 
  • 1/8 teaspoon chili powder 
  • 1/8 teaspoon salt 

Nachos 

  • 8–10 oz bag tortilla chips 
  • 1 cup black beans, drained and rinsed 
  • 1 cup corn 
  • 2 cups Mexican blend shredded cheese 
  • 2 cups Greenswell Growers Essential Green Leaf, chopped 
  • ¾ cup tomatoes, diced 
  • 1 tablespoon green onions, sliced 
  • Salt and pepper 
  • Avocado crema 

How to Make It: 

  1. Add all Avocado Crema ingredients to a food processor and blend until smooth. This can be made ahead and refrigerated until ready to serve with nachos. 
  2. Set oven to broil. On a sheet pan, spread the chips evenly. Layer beans, corn, and cheese on top. Put the tray in the oven until cheese is melted. Watch closely to avoid burning the cheese or chips. 
  3. Top the nachos with Greenswell Growers Essential Green Leaf, tomatoes, green onions, salt, and pepper. 
  4. Add dollops of the avocado crema and serve with the remaining sauce. 
  5. Enjoy immediately. 


Tip:
 For even easier cleanup, line the sheet pan with foil and toss it after all the nachos have been enjoyed.
