This Winter Citrus Salad is like sunshine on a plate. It takes full advantage of seasonal fruits to brighten even the darkest day.
The key is to mix and match different citrus fruits to create a symphony of flavor and color. Cara Cara oranges, for instance, are sweeter and less acidic than other varieties. Blood oranges bring a striking burst of color and a berry-like, unique flavor. If you enjoy the bittersweet taste of grapefruit, toss that in too! In this salad, citrus flesh is used for the salad, while fresh juice is reserved for the vinaigrette.
Mint adds a refreshing brightness, while a sprinkle of chopped pistachios provides an earthy, salty crunch that enhances the citrus flavors. Sliced red onion introduces just the right amount of sharpness and a pop of purple. Finally, a perfectly balanced citrus vinaigrette ties all the components together.

What You’ll Need:
For the Citrus Vinaigrette:
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- 1 tablespoon champagne vinegar
- 3 tablespoons citrus juice (freshly squeezed)
- 1 garlic clove, grated
- Salt and pepper
- ¼ cup olive oil
For the Salad:
- 1 tray Greenswell Growers Tender Butter Blend Lettuce
- 2 Cara Cara oranges, peeled and sliced
- 1 blood orange, peeled and sliced
- ¼ cup Pistachios, chopped
- 1 tablespoon Mint, fresh rough chopped
- 1 red onion, sliced (optional)
- Citrus vinaigrette, to taste

How to Make It:
- Whisk the honey, Dijon, vinegar, citrus juice, grated garlic and salt and pepper together. Slowly drizzle the olive oil in while whisking. Use right away or store in refrigerator for up to 4 days in advance.
- In a large bowl or platter, begin with as much Tender Butter Blend as fills the platter or needed for your group size.
- Arrange the citrus slices, sprinkle the pistachios, arrange the mint, and add red onion if using. Finish by drizzling desired amount of citrus vinaigrette.
- Serve and enjoy!
